500gm chicken
120gm yogurt
2tbsp red chilli powder
1 lemon
Salt to taste
Oil to fry
Coriander to garnish
For Kohlapur Masala
2 bay leaves
1-2 cinnamon stick
5 cloves
1 large onion
½ tbsp crushed black pepper
2 tomatoes
5tbsp grated dry coconut
2tbsp refined oil
1. Clean and cut the chicken into chunks, chop onion and tomato.
2. Marinate chicken pieces with yogurt, red chilli powder, lemon juice and salt to taste. Mix well and keep aside for half an hour.
3. In a pan, heat oil, add bay leaf, cinnamon stick, cloves, and chopped onion.
4. Add crushed black pepper and sauté until onion turn translucent.
5. Stir in grated coconut, fry till coconut changes colour, add chopped tomato, cover and cook for 4-5 minutes.
6. Cool and puree the mixture in a blend.
7. In the same pan, heat oil and add the marinated chicken pieces. Cook for 20-25 minutes on low flame. Stir regularly.
8. Add the pureed kholapur masala, stir and cook in low flame for 5-10 minutes.
9. Check for seasoning. Garnish with coriander.
