VEGETABLE AND EGG MUFFINS

 INGREDIENTS

8 eggs 
100gm baby spinach
1 medium red pepper
1medium green pepper
1 medium onion
100gm button mushrooms 
2 cloves garlic 
1tpsp chilli powder
1tbsp olive oil
Salt and freshly crush black pepper
 Method
1.Preheat the oven to 150°C. Chop red pepper, green pepper, onion, mushrooms and baby spinach. Mince the garlic and whisk the eggs together.
2. Heat non sticks pan over medium heat; add in olive oil and sauté all the vegetables except spinach until the peppers are tender.
3. Add in spinach and cook for another 2 minutes. Season with salt and pepper.
4. Pour the cooked veggies into the whisked eggs. Stir to combine, add chilli powder.
5. Grease 8 muffin pan with cooking spray; pour the egg/veggie mixture evenly into the muffin pan.
6. Bake for about 15 minutes, or until the tops are firm to the touch.
7. Let cool in the pan for a few minutes, before removing.
