1 cup rice beans

200gm spinach

4 medium carrots

2 turnips 

3 medium potatoes

250gm pumpkin

2 onions

5-6 cloves garlic

2tbsp olive oil/ refined oil

1 teaspoon dried thyme

2 bay leaves

 Salt and black pepper to taste

1 litre water

1. Soak the beans, pressure cook and keep aside. Peel and dice the vegetables. Slice onion and garlic.
2. In a large pan, add the olive oil, onion and garlic. Cook for 2 minutes.
3. Add bay leaves, carrots, turnip, potato and pumpkin. Stir together, place the lid on the pot and cook for 5 minutes.
4. Add the thyme, salt, pepper and water. Stir, place the lid back on the pot and lower the temperature to a medium-low. Simmer for 30 minutes.
5. Stir in the beans and the spinach and cook for 15 minutes.
6. Check for seasoning and adjust according to tastes.
